BANANA OATMEAL COOKIES
1/2 cup unsalted butterat room temperature
1 large egg
1 1/2 teaspoons pure vanilla extract
1 cup pops flour
1 tsp baking soda
1 tsp salt
2 tsp ground cinnamon
3 1/4 cup old fashioned oats
Scrape the sides of the bowl and blend in the egg until completely incorporated. Scrape the sides of the bowl again and add in the skillet and vanilla.
Gently add the bread mixture to the banana mixture and blend until just blended.
Scrape the sides of the bowl and stir to recombine.
Stir in the oats and chocolate chips and blend until incorporated.
Use a moderate cookie scoop (approximately 1.5 tablespoons) to scoop the dough onto prepared cookie sheets leaving about 2 inches between each cookie.
Bake in preheated oven for about 9-11 minutes.
Remove cookies from the oven and lightly press the tops of each cookie with the base of a drinking glass. Because these cookies do not spread much, this will give them a traditional cookie form.
Permit the banana oatmeal cookies to cool on the cookie sheets for 5 minutes before removing them to a wire rack to cool thoroughly.
